I swear that I am not looking for sociopolitical allegory every time I sit down to watch an action movie and bake treats, but I suppose that in times like these everything has a symbolic bent to it. This week In had an itch that only America’s husband Harrison Ford could scratch, and so I knew it was time to run through the city of Chicago with Dr Richard Kimble on his quest to clear his name! That’s right folks, we’re watching 1993’s The Fugitive!

In other stressful news, my beloved neighborhood coffee shop closed, forcing me to do the unthinkable……make coffee at home. If you know me, you know that the only thing I do not like to make is coffee, and so I have mostly switched to tea and bottled cold brew at home. I have become quite experimental in my new cappuccino free life, and have recently started making my own pistachio milk, which feels like a big shift as a life long animal milk enthusiast. But it is SO easy to make and SO delicious mixed in my caffeinated bevies, and I am very much enjoying this little love affair with milked nuts. To make pistachio milk one simply soaks raw pistachios in water, blends, strains and voila- milk! But then one is left with a cup of perfectly good pistachio meal which one feels guilty about throwing in the trash, so one needed to find a use for the pistachio meal, and now one is giving you a recipe for giant, soft baked pistachio tahini cookies which make a delightful compliment to this tour-de-force film!
